Easy Mini Cornbread

This sweet cornbread recipe is perfect to pair with most meals! It is an easy recipe that only takes about 35 minutes from start to finish.

Equipment

  • 6 ox. ramekin

Ingredients
  

  • 1 Tbsp butter divided in thirds
  • ¾ c flour
  • c sugar
  • ¼ c corn meal
  • ½ Tbsp baking powder
  • ¼ tsp salt
  • ½ c + 2 Tbsp milk warmed
  • 1 egg beaten
  • 2 Tbsp + 2 tsp vegetable oil
  • 1 ½ Tbsp butter melted

Instructions
 

  • Preheat oven to 350℉.
  • Divide 1 Tbsp of butter into thirds and place in 3 separate ramekins.
  • Place ramekins in the oven for 5 minutes so the butter melts and the ramekins warm up.
  • In a medium bowl, combine flour, sugar, cornmeal, baking powder, and salt.
  • In a small bowl, combine warm milk, egg, vegetable oil, and melted butter.
  • Add the egg mixture to the flour mixture and stir until there are no dry spots.
  • After ramekins and butter are done in the oven, divide the batter evenly among the three.
  • Bake for 27-30 minutes or until a wooden toothpick inserted into the middle comes out clean.

Notes

Toppings: honey butter, syrup, honey, sweet butters, peanut butter and syrup, or just eat it plain.
Pairings: taco soup, chili, stew, fried fish, fried chicken, or whatever family meals you feel it will go with!
