This sweet cornbread recipe is perfect to pair with most meals! It is an easy recipe that only takes about 35 minutes from start to finish.
Easy Mini Cornbread
Equipment
- 6 ox. ramekin
Ingredients
- 1 Tbsp butter divided in thirds
- ¾ c flour
- ⅓ c sugar
- ¼ c corn meal
- ½ Tbsp baking powder
- ¼ tsp salt
- ½ c + 2 Tbsp milk warmed
- 1 egg beaten
- 2 Tbsp + 2 tsp vegetable oil
- 1 ½ Tbsp butter melted
Instructions
- Preheat oven to 350℉.
- Divide 1 Tbsp of butter into thirds and place in 3 separate ramekins.
- Place ramekins in the oven for 5 minutes so the butter melts and the ramekins warm up.
- In a medium bowl, combine flour, sugar, cornmeal, baking powder, and salt.
- In a small bowl, combine warm milk, egg, vegetable oil, and melted butter.
- Add the egg mixture to the flour mixture and stir until there are no dry spots.
- After ramekins and butter are done in the oven, divide the batter evenly among the three.
- Bake for 27-30 minutes or until a wooden toothpick inserted into the middle comes out clean.
