Mini Chocolate Fudge Cakes

After multiple attempts and failures, I was able to get a chocolate cake recipe I was excited to share with others!

Mini Chocolate Fudge Cakes

Equipment

  • 4" Bundt cake pan

Ingredients
  

  • 1 egg
  • ¼ c + 1 Tbsp milk
  • ¼ c sour cream
  • ¼ c oil or melted butter
  • ¼ c milk chocolate chips chopped
  • 1 tsp baking soda
  • tsp salt
  • ¼ c cocoa powder
  • ½ c sugar

Instructions
 

  • Preheat oven to 350°F.
  • Grease four mini Bundt pans. I use 4 – 4 ½ inch pans.
  • In a medium bowl, whisk together the egg, milk, sour cream, and oil or melted butter.
  • In a separate medium bowl combine the chopped chocolate chips, baking soda, salt, cocoa powder, and sugar.
  • Stir the liquid mixture into the dry ingredients until combined.
  • Divide evenly into each of the greased pans.
  • Bake for 20 minutes or until toothpick comes out clean.
  • Loosen the edges with a soft spatula or butter knife and flip upside down onto a plate.
  • Serve with my homemade hot fudge sauce and berries or whipped cream.
