Baked Jalapeño Popper Chicken

 Try this recipe whenever you need a quick dinner! It takes less than an hour to make and clean up is amazingly simple. 

Baked Jalapeño Popper Chicken

Ingredients
  

  • 2 oz. cream cheese softened
  • ½ c shredded cheddar cheese plus more for topping
  • 2 strips of cooked bacon chopped
  • tsp onion powder
  • ¼ tsp garlic powder
  • 2 Tbsp minced jalapeno
  • 2 large chicken breasts

Instructions
 

  • Preheat oven to 425°F.
  • Add both cheeses, bacon, onion powder, garlic powder, and jalapeño together.
  • Slice the chicken breasts diagonally about ½ – ¾ of the way through the chicken breasts. Then stuff the chicken with the cream cheese mixture.
  • Bake the chicken in the oven for 15 minutes.
  • After 15 minutes, take your chicken out of the oven and add shredded cheddar cheese on top.
  • Bake 5 more minutes until the cheese has melted.
  • Make sure your chicken has reached an internal temperature of 165°F.

Notes

Taste: If you don’t want the spice but want the taste, take the seeds and white center out of the jalapeño before you mince it
Sides: We had salad with rice as a side for this dish and it went so well together.
