Bacon and Egg Scrambler

 Such a yummy recipe! My dad would always make this when we had leftover’s: steak, brats, sausage, or bacon. We always loved these meals. Now whenever my husband and I go camping we always make this. We make the potatoes ahead of time since they take a while to cook. Then we take our cast iron pan and make breakfast in the mornings. 

Bacon and Egg Breakfast Scrambler

Ingredients
  

  • 4-6 slices of bacon cut into pieces
  • 2 red potatoes thinly sliced
  • 1 tsp Montreal steak seasoning
  • ¼ c milk
  • 4 eggs
  • Salt and pepper to taste
  • ½ c cheddar cheese shredded
  • 2 oz. Velveeta cheese cubed

Instructions
 

  • Cook the bacon pieces then put aside.
  • Remove most of the bacon grease from the pan, leaving a little to cook the potatoes with.
  • Place the potatoes in the pan and season with salt, pepper, and the steak seasoning.
  • Cook the potatoes until they are tender.
  • Whisk the milk and eggs together then add the bacon to them.
  • Pour the egg mixture into the pan with the potatoes.
  • Once the eggs are almost done cooking, add the cheeses to the pan and continue cooking until melted.
  • Serve with your favorite bread and fruit.

Notes

Variations: you can use any meat you have on hand. On the rare occasion that we had leftover steak in the fridge, my dad would use that. We also used brats and sausage. This is just a good way to use the extra meat in your fridge.
