One Pan Chicken and Veggie Bake

This dish is perfect for busy week nights, meal prepping, or freezing for later use. While dish can stand on it’s own, you can make this and eat it with tortillas and avocado salsa.

One Pan Chicken and Vegetable Bake

Ingredients
  

  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp basil
  • ½ tsp oregano
  • ¼ tsp cayenne
  • ½ tsp black pepper
  • ½ tsp caldo de tomate
  • ¼ tsp salt
  • 1 large chicken breast cubed
  • Red potato diced
  • Sweet potato diced
  • Carrots diced
  • Green beans chopped
  • Asparagus chopped
  • Broccoli chopped
  • 2 Tbsp oil
  • ½ tsp lime juice

Instructions
 

  • Preheat oven to 400℉.
  • Combine all of the dry seasonings together.
  • Add the chicken, red potato, sweet potato, carrots, green beans, asparagus, and broccoli to a bowl and stir together.
  • Pour the oil into the bowl and stir. One everything has been coated with the oil, pour the seasoning in and stir again. Make sure everything has been coated with the seasonings.
  • Bake for 15 minutes on a sprayed pan. Flip the veggies and chicken over then place back in the oven 10-15 more minutes.
  • Once out of the oven, add lime juice and enjoy!
