A deliciously cheesy appetizer for your next game night! What more could you ask for than cheese, spice, and tortillas?

Ingredients
  

  • ½ white onion diced
  • 1 serrano pepper minced
  • 1 roasted poblano pepper peeled and seeded
  • 12 oz pork chorizo
  • 12 oz queso Oaxaca shredded
  • 8 oz pepper jack cheese grated
  • tortillas or chips for dipping

Instructions
 

  • Preheat oven to 350℉.
  • In a cast iron skillet, on medium heat, cook onions and both peppers until the onions are tender and transparent.
  • Add in the chorizo and stir until it has been throughly cooked.
  • Reserve about ¼ of the chorizo mix in a bowl for later.
  • Alternating between the cheeses. Layer them on top of the chorizo in the pan.
  • Once all the cheese has been placed in the pan. Put the reserved chorizo on top and bake 15 mintues.
  • Remove from the oven. No resting time needed.
  • Grab and enjoy with warm corn tortillas or use as chip dip. Enjoy!

In 2021, during a trip to MX with Arturo’s family, they showed me this incredible melty cheesy dish. After that moment, I was determined to master the recipe. Notes

Due to the amount of oil in the cheeses and chorizo, you will probably have to slim some off the top of the dish before serving. 
This is best served hot out of the oven.
