Copycat Cinnabon Cinnamon Rolls for Two

Ingredients
  

Dough

  • 3 Tbsp warm milk
  • ½ tsp instant yeast
  • 1 Tbsp granulated sugar
  • 1 large egg yolk room temperature
  • ¼ tsp salt
  • 2 tsp butter very soft, but not melted
  • ½-¾ c flour

Filling

  • ¼ c brown sugar packed
  • ¼ tsp vanilla extract
  • tsp cinnamon
  • Tbsp butter

Frosting

  • Tbsp cream cheese very soft
  • 3 Tbsp butter very soft
  • Dash of salt optional
  • ¼ tsp vanilla extract or maple extract
  • ¾ c powdered sugar

Instructions
 

  • In a medium bowl, combine warm milk, instant yeast, granulated sugar, egg yolk, salt, and very soft butter for the dough.
  • Gradually add ½-¾ cup of flour to the mixture until a soft and slightly sticky dough forms.
  • Form the dough into a ball and let it rise in an oiled, covered bowl until it doubles in size, approximately 30 minutes.
  • While the dough is rising, prepare the filling by mixing together brown sugar, vanilla extract, cinnamon, and butter.
  • Once the dough has doubled in size, roll it out into a long strip, about 6 inches wide.
  • Spread the cinnamon filling evenly over the dough. Cut into 4 even strips lengthwise.
  • Roll up 1 strip then place it on another and continue rolling them up. Repeat this with the 3rd and 4th strips making 2 individual rolls out of the 4 strips. Place them into sprayed ramekins. Let them rise, covered, again until doubled in size, approximately 30 minutes.
  • Preheat your oven to 350°F (180°C) and bake the cinnamon rolls for 10-15 minutes or until the dough is fully cooked. Position the rack just below the middle position to prevent overly browning the top and you can also add aluminun foil after the first 10 minutes of baking.
  • While the rolls are baking, prepare the frosting by mixing softened cream cheese, butter, salt(if using), and vanilla or maple extract. Once smooth, add powdered sugar until fully incorporated.
  • When the cinnamon rolls are done baking, spread the frosting over them while they are still warm.

Notes

I cook the cinnamon rolls in my oven for 13 minutes, but all ovens vary.
If you want the rolls to have more of a Cinnabon flavor, add maple extract instead of vanilla. Either tastes delicious it just depends on your personal preference. 
Feel free to microwave the butter and cream cheese for a few seconds at a time every time you need them softened. As long as they don’t get hot or melt the texture will be perfect.
