Bell Pepper Chicken – Instant Pot Version

Ingredients
  

  • 1 Tbsp butter
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 1 orange bell pepper chopped and seeded
  • 1 medium tomato chopped
  • 1 c water or chicken broth
  • 1 ½ tsp cumin
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp caldo de tomate
  • 1 tsp red pepper flakes
  • 1 tsp paprika
  • 1 chicken breast cooked and cubed

Instructions
 

  • On sauté mode in the instant pot, melt your butter then add the onion and cook until tender. Add in the garlic, bell pepper, and tomato, cook until soft.
  • Add the water or chicken broth, cumin, salt, oregano, basil, caldo de tomate, red pepper flakes, and paprika to the pot
  • Stir, then pressure cook for 25 minutes.
  • Release the pressure. Pour the sauce into a blender and blend until smooth. Add the sauce back to the instant pot and add the chicken to the pot as well.
  • Cook the sauce and chicken together until sauce thickens.
  • Enjoy with tortillas or rice!
