Bell Pepper Chicken – Instant Pot Version
Ingredients
- 1 Tbsp butter
- 1 small yellow onion diced
- 2 garlic cloves minced
- 1 orange bell pepper chopped and seeded
- 1 medium tomato chopped
- 1 c water or chicken broth
- 1 ½ tsp cumin
- 1 tsp salt
- 1 tsp oregano
- 1 tsp basil
- 1 tsp caldo de tomate
- 1 tsp red pepper flakes
- 1 tsp paprika
- 1 chicken breast cooked and cubed
Instructions
- On sauté mode in the instant pot, melt your butter then add the onion and cook until tender. Add in the garlic, bell pepper, and tomato, cook until soft.
- Add the water or chicken broth, cumin, salt, oregano, basil, caldo de tomate, red pepper flakes, and paprika to the pot
- Stir, then pressure cook for 25 minutes.
- Release the pressure. Pour the sauce into a blender and blend until smooth. Add the sauce back to the instant pot and add the chicken to the pot as well.
- Cook the sauce and chicken together until sauce thickens.
- Enjoy with tortillas or rice!
