Carne Asada Fries

The very first food my husband and I ate together. We love this dish but the perfectly crisp fries tie it all together. I hope you can share this dish with someone special (even if it is just yourself!)

Ingredients
  

Fries

  • 2-3 medium fries
  • c flour
  • ½ tsp salt
  • 2 Tbsp corn starch
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne powder
  • ½-¾ c seltzer water

Toppings

  • sour cream or crema
  • guacamole
  • shredded cheese or nacho cheese
  • pico de gallo
  • cooked steak cubes I marinate mine with orange juice, soy sauce, garlic, Chef Merito Carne Asada Seasoning, and cilantro

Instructions
 

Prepare the Batter:

  • In a mixing bowl, combine flour, cornstarch, salt, paprika, baking powder, garlic powder, onion powder, and cayenne powder.
  • Whisk the dry ingredients together until well combined.
  • Gradually whisk in 1/2 to 3/4 cup of seltzer water until the mixture reaches the consistency of pancake batter, smooth and slighly runny.

Prepare the Fries:

  • Wash, peel, and cut the potatoes into fries.
  • Heat oil in a deep fryer or large pot to 325-350 degrees F.
  • Fry the cut potatoes in batches until golden brown, the first time. Remove and drain on paper towels with a plate underneath.

Second Fry with Batter:

  • Dip each pre-fried french fry into the batter, ensuring an even coating.
  • Carefully place the battered fries back into the hot oil and fry until they achieve a second golden brown color.
  • Remove and drain on paper towels.
  • Transfer the twice-fried fries to a small baking dish.
  • Sprinkle a generous amount of shredded cheese over the fries.
  • Place the baking dish under the broiler for 1-2 minutes or until the cheese is melted and bubbly.
  • Keep a close eye to prevent burning.

Final Assembly

  • Once the cheese has melted, remove the fries from the oven.
  • Top the cheesy fries with dollops of sour cream, pico de Gallo, guacamole, and cooked steak chunks.
