My first post! This is a spin off of the alfredo recipe my mom would make for us while growing up. It is the perfect recipe for whenever you want good food but don’t have energy to spend hours in the kitchen. When my husband and I make it, we will eat it for dinner then put the extra in the fridge for him to take to work the next day. I hope you enjoy!
Creamy Chicken Alfredo For Two
Ingredients
- 2 C rotini pasta
- 1 chicken breast sliced
- ⅛ tsp oregano
- ⅛ tsp thyme
- ⅛ tsp salt
- ¼ tsp red pepper flakes plus more for topping, optional
- 4 strips of bacon chopped
- ½ medium white onion chopped
- 1 tsp fresh garlic minced
- 3 C heavy cream divided
- ⅛ tsp salt
- ¼ C parmesan
- 5 cherry tomatoes optional
- handful of spinach optional
Instructions
- Boil pasta in salt water until al dente. Drain but save the remaining pasta water for later. Set pasta to side.
- Cook sliced chicken with oregano, thyme, salt, and red pepper flakes on medium heat until chicken is cooked all the way through. Set aside for later.
- Cook bacon, onion, and garlic on medium low heat until onion is tender and bacon is cooked.
- Drain excess bacon grease and add mixture back to pan. Add 2 cups heavy cream, garlic powder, and salt. Cook down the cream until it has thickened. Add parmesan cheese.
- Add chicken, pasta, cherry tomatoes, and spinach to cream mixture.
- If you feel as though you don’t have enough sauce, add more cream. As you cook everything together, your pasta will soak up the flavor of the sauce. you can add in some pasta water if you feel the pasta the sauce is too thick.
- Top with parmesan cheese and red pepper flakes.

~Customize this dish just for you~
Pasta: I used whole wheat rotini because whole wheat pasta has more nutrients but you can use whichever you prefer. Other pasta’s choices could be fettuccini, angel hair, rigatoni, penne
Meat: You can substitute shrimp in place of the chicken if you prefer shrimp, I use chicken because it is a low budget ingredient.
Veggies: I used tomatoes and spinach that I had in my fridge. The tomatoes add a nice flavor to the sauce but you can do without them if you want. Other vegetable ideas would be: broccoli, zucchini, peppers, brussel sprouts, asparagus, etc.
Side dish suggestions: garlic bread, French bread, or Caesar salad
