Crispy Fried Chicken Sandwiches

Ingredients
  

  • 2 boneless chicken breasts
  • 4 sandwich buns
  • oil to fry with

BUTTERMILK MIXTURE

  • 1 c buttermilk
  • ½ tsp paprika
  • 1 tsp garlic powder
  • ½ tsp pepper
  • ½ tsp salt
  • ½ tsp cayenne
  • ½ tsp cajun seasoning

FLOUR MIXTURE

  • ¼ c corn starch
  • ¾ c flour
  • 1 Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp cayenne
  • 1 Tbsp baking powder
  • ½ Tbsp salt
  • ½ Tbsp pepper
  • ¼ c buttermilk mixture

Spicy Mayo

  • ½ c mayo
  • 1 Tbsp hot sauce
  • 2 tsp cajun seasoning
  • ½ tp garlic powder

Instructions
 

  • Heat oil in pan to 350°F
  • Using a meat mallet, pound chicken until it is about ½ inch thick. Cut chicken in half crosswise.
  • In a bowl, mix all the ingredients for the “buttermilk mixture” together. (If you do not have buttermilk on hand, add 1 tablespoon of vinegar with 1 tablespoon of lemon juice then add milk until it hits the 1 cup mark, let sit until the milk is chunky and thick.)
  • Add the chicken to the buttermilk mixture making sure to cover the chicken completely. Place in the fridge for 10-15 minutes.
  • Combine the “flour mixture” ingredients together. Place ¼ c of buttermilk mixture to the flour mixture and stir it together.
  • Take the chicken out of the buttermilk and place in the flour mixture. Pat the flour mixture onto the chicken and let the chicken sit in the flour mixture for 1-5 minutes.
  • Cook the chicken pieces in oil flipping over so both sides are cooked. When the chicken’s internal temperature reaches 160℉ remove from the oil mixture, place on paper towel, and sprinkle with Cajun seasonings or cayenne if you want more spice.
  • To assemble, mix all the ingredients from the “spicy mayo” section. Butter 4 buns and toast until golden brown. Spread mayo and place toppings on the buns, add the chicken, and enjoy!

Notes

Seasoning: If you want a spicy sandwich, double the seasonings in the flour mixture and put extra Cajun or cayenne on top when it comes out of the oil
Sides: This goes well with mac and cheese, fries, sweet potato fries, any salad(green, veggie, or fruit)
Cooking: Only put your chicken in once the temperature has reached 350 degrees. This helps cook your chicken without burning the outside and also helps the skin stay on. Cook one side until the underside is hardened, then flip the chicken over to cook the other side.
