Dad’s Caramel Popcorn

When I was in high school, my friends and I would spend weekend nights playing games and watching movies at my house. No matter how late we were up, my dad would always make his caramel popcorn for us to enjoy! When I was away from home, he would send me a care package of fresh caramel popcorn for me to enjoy. This definitely has a special place in my heart. Recently, some of my friends have been asking me to share the tutorial and recipe on my page. I have cut the recipe down so it can be enjoyed by two to three people!

Dad’s Caramel Popcorn

Equipment

  • Popcorn Air Popper

Ingredients
  

  • 2 Tbsp popcorn kernel
  • ½ c pecans optional
  • ¼ c butter
  • ½ c brown sugar
  • 2 Tbsp light corn syrup
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp vanilla optional

Instructions
 

  • Air pop the kernels. This should equal about 4 cups of popped popcorn. Take out any unpopped kernels and add the popcorn into a brown paper bag with the pecans.
  • In a small saucepan add the butter, sugar, syrup, and salt together. Bring to a boil. Continue to let it boil for 2 minutes while stirring constantly.
  • Remove from heat and stir in baking soda then stir in vanilla.
  • Pour the caramel over the popcorn and pecans. Close the top of the paper bag and shake together. Microwave 45 seconds then shake again. Microwave another 45 seconds and shake again.
  • Pour contents out into a flat baking dish and let cool. Enjoy!

Notes

While shaking the bag, shake it upside down and sideways while shaking to make sure the caramel is getting equally distributed.
