Molten Lava Cakes

 A perfect recipe for chocolate lovers and romantics alike! Whether you are dating yourself or someone else, this is a perfect recipe for blissful chocolaty indulgence. The whole recipe takes less than 30 minutes and is so easy! Valentine’s weekend is here so treat yourself or someone else! 

Molten Lava Cakes

Equipment

  • 8 oz. ramekin

Ingredients
  

  • 7 oz chocolate chopped
  • ¼ c butter
  • 3 lg eggs
  • 2 egg yolks
  • ¼ c sugar
  • 1 Tbsp brown sugar
  • ¼ tsp salt
  • Vanilla
  • 2 ½ Tbsp flour

Instructions
 

  • Heat oven to 425°F
  • Place chopped chocolate and butter in a saucepan and melt on low heat. Stir constantly to avoid scorching.
  • In a medium bowl, whisk together the eggs and egg yolks.
  • Whisk the melted chocolate into the eggs.
  • After the chocolate and eggs are combined, whisk in the sugar, brown sugar, salt, and a few drops of vanilla.
  • Fold in all of the flour.
  • Butter and flour three ramekins.
  • Divide the batter evenly into the ramekins.
  • Bake for 12-15 minutes.
  • Once you pull them out of the oven, run a knife between the cake and ramekin. Let them sit two minutes. Place a plate on top of the ramekin and flip it over. Take the ramekin off. The cake should slide out easily.

Notes

This is a very rich dessert, my husband and I usually share one so this recipe lasts us a few days.
Sides and toppings: I top mine with powdered sugar, vanilla ice cream, or whipped cream.
If you aren’t a fan of chocolate, you can substitute white chocolate and serve with fresh fruit or a fruit puree.
