Valentine’s Molten Lava Cakes

Ingredients
  

  • ¾ c chocolate chips of your choice
  • 4 ½ tablespoons unsalted butter
  • 1 large egg
  • 2 large egg yolks
  • cup granulated sugar
  • 1 tablespoon brown sugar
  • ½ teaspoon vanilla extract
  • tsp salt
  • 2 ½ all-purpose flour
  • Optional: powdered sugar, berries, or ice cream for serving

Instructions
 

  • Preheat your oven to 425°F (220°C). Coat two 8 oz ramekins with butter and lightly dust them with cocoa powder or flour.
  • In a microwave-safe bowl, add the butter. Microwave until butter has fully melted then add in the chocolate chips. Stir until melted and smooth – microwaving in 5 second intervals if chocolate does not fully melt. Alternatively, you can melt them together using a double boiler on the stovetop.
  • In a separate mixing bowl, whisk together the egg, the two egg yolks, sugars, vanilla extract, and salt until well combined.
  • Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth.
  • Sift the flour into the chocolate mixture and fold gently until just combined. Be careful not to overmix.
  • Divide the batter evenly between the prepared ramekins.
  • Place the ramekins on a baking sheet and bake for about 13-18 minutes, or until the edges are set but the centers are still soft.
  • Remove from the oven and let the lava cakes cool in the ramekins for 1-2 minutes.
  • Carefully run a knife around the edges of the cakes to loosen them, then invert them onto serving plates.
  • Dust with powdered sugar if desired and serve immediately, topped with berries or a scoop of ice cream.
