Servings 8 popsicles

Equipment

  • Popsicle molds

Ingredients

  • 2 oz. cream cheese softened
  • ¾ c. half and half
  • c. Oreo pudding mix 60 grams
  • 4 Oreos crushed

Instructions

  • Whisk cream cheese until light and smooth.
  • Gradually add in the half and half. I start by adding a teaspoon at a time and whisking in between until it is smooth. This helps to reduce cream cheese chunks in the end product.
  • Once all of the half and half is mixed in, whisk for 2 minutes until pudding mix has thickened.
  • Fold in the crushed Oreos. Add the mixture to popsicle molds and freeze for at least 4 hours.
  • To loosen, hold the molds under hot water for 10-20 seconds. The popsicle should easily release from the mold. Enjoy!

Notes

Flavors
-you can use any flavor pudding packets for this recipe. I recommend trying vanilla or chocolate pudding with it.
-if you are not a fan of chocolate, use vanilla or lemon sandwich cookies.
Freezing
-when we were little we used the little Dixie cups and put wooden popsicle sticks on top and freeze that way. I picked up my popsicle molds from Walmart for a few dollars but you can use what you have on hand.
Lighter Version
-Use 1 c of milk and omit the cream cheese for a lighter version
Popsicle molds: I bought mine for a few dollars at Walmart but I am sure you can find them at most stores. When I was a kid we used to use the 3 oz. bathroom cups and put wooden popsicle sticks in them before freezing.
